Another Yummy, Healthy & Simple Slow Cooker Recipe

I have come across another wonderful recipe! I am always searching for new, healthy and easy things to prepare and cook ...especially for dinner in my slow cooker. If you have any new fun and yummy recipes please feel free to share with us as well!


Savory Pork Roast

4-5 lb. Pork Loin Roast
1 Onion sliced
1-3 Bay Leafs
2 Tbsp. Soy Sauce
1 Tbsp. Garlic Powder

1. Place roast & onion in slow cooker. Add the bay leafs, soy sauce and garlic powder.
2. Cover. Cook on High 1 hour and then on Low 6 hours.
3. Slice, serve & Enjoy!!!

Slow Cooker Pork Chops & Mushrooms

4 boneless pork chops
2 medium onions, sliced
4-oz. can sliced mushrooms, drained
1 envelope dry onion soup mix
1/4 cup water
10 3/4-oz can golden cream of mushroom soup

1. Place pork chops in greased slow cooker. Top with onions and mushrooms
2. Combine soup mix, water and mushroom soup. Pour over mushrooms
3. Cover. Cook on Low 6-8 hours.

Our Weekend in NJ

On Saturday Kevin headed to Phoenix for a business trip so Brady & I headed to NJ to spend a few days with the Vera family. We had a wonderful time and we are looking forward to going back to visit with them in the Spring so we can go to the beach!!!

A Yummy South Beach Diet Recipe

We bought a new cookbook....The South Beach Diet Quick & Easy Cookbook by Arthur Agatston, MD. There are some awesome tasty and simple recipes in our new book which helps make this diet much easier. Below is a wonderful recipe for Stuffed Baked Tomatoes!

4 plum tomatoes, halved lengthwise
10-15 button mushrooms finley chopped
3 ounces shredded part-skim mozzarella cheese (1/2 cup)
1/4 cup roughly chopped fresh basil leaves
2 tablespoons freshly grated Parmesan cheese
1 garlic clove, minced
1/2 tablespoon of shallots
Dash of Thyme
Cooking Wine
Salt and freshly ground black pepper

Heat oven to 400 degrees. Scoop out the inside of each tomato half and roughly chop the scooped pulp. Heat 1-2 tablespoons of olive oil in a large nonstick skillet over medium to high heat. Add your mushrooms, minced garlic and shallots. 2-4 minutes later add your cooking wine. Once mushrooms appear to be sauteed add the rest of the ingredients, except for the cheese, for only a few minutes & then turn the heat off.

Place tomatoes, cut side up, on a baking sheet. Add cheese to mixture and then spoon in tomato mixture and bake until cheese is melted and lightly browned, about 10 minutes.

Happy New Year!!!


We had a very nice and low key New Years. Our neighbors came over and the kids had a great time playing together. Brady had his first KISS and he now has a new girlfriend. CHEERS to a wonderful 2009!!!
